Day 11 –
All right, so with 11 days behind me, one of the biggest questions is: what are you eating? So many look at what is not allowed and assume that doesn’t leave much. Au contraire mon frère. Granted, I’m not terribly creative in the culinary department but I also don’t get bored with the same foods.
Despite the fact that I was busted staring longingly at pudding last night at work, I really do pretty well overall. Last night was just a longer night working than I anticipated, so I will know better tonight to keep some food on hand there so the temptations and cravings don’t grow. I mean, you have to admit, it IS hard to cut foods from your diet but still see and smell them for hours on end. (Pizza!)
Anyway, I’ve kept a careful log of all the food I eat, so here’s a sampling of some of my meals —
- Chuck tender steak with two over easy eggs and sautéed green peppers and onions
- Baked (and then broiled) chicken thighs with green beans and sauerkraut
- Chicken breast with zucchini, red pepper, onions, and mixed greens
- Eggs with butternut squash, onions, and avocado
- Crumbled ground beef with scrambled eggs and cabbage
See, not bad. In fact, quite yummy!
Day 12 –
I slept really, really well last night. My dogs even allowed me to sleep in. I ran my tail off at work last night, so I’m thankful for that. However, I was weak this morning and had TWO cups of coffee with added coconut milk. I like it!
I added another five miles to my walk today (along with five yesterday) and was good to go afterward, so I think it’s safe to say that my energy and strength is maintaining at a great level.
My skin is also clearing up, and while I still have tingling and numbness often, I can at least say that after my photo shoot the other day, I didn’t suffer feeling wrecked the next couple of days. Each improvement seems small, but it’s huge to me.
Today I felt very energetic mentally, as in, more focused and able to stay on task (one task at a time). This would be a very good thing going forward, as my brain normally runs in a hundred different directions.
I’m almost at the halfway point and loving the changes. I can’t wait to see how this keeps getting better.
